Unsprayed apples were carefully harvested from the grass of an old Showering’s orchard in Galhampton, just a couple of miles from The Newt. The apples fell from the tree over a period of 2 to 3 weeks – fully ripe and ready to press. The cyder is fermented to sweet and has aromas of baked apple and gooseberry. A rich, tannic cyder with bright fruit at the start with an astringent finish.

Lying in the heart of cyder country, in an area steeped in cider-making traditions, of course we take cyder seriously here at The Newt. Blessed with the perfect climate for growing apple trees, we have planted a
65-acres cyder orchard, home to 3000 trees and 70 different varieties. The apples are pressed and cold-fermented in our cellar, racked gently from their sediment over a six-month period to develop their refined complexity.

Wherever you are in Somerset, you're not far from an ancient orchard or cyder press. Apples are to Somerset as grapes are to Bordeaux – part of the landscape's history and daily life. When the Romans invaded Britain,
they found cider already being quaffed. Back then, fermented apple juice was safer than water, so workers drank it all day long, even with breakfast! By the 17th century, when Hadspen House (now our hotel) was
being built, the rarefied country classes still preferred fine cyder to imported champagne, serving the watered down 'cider' to their workers (often in lieu of wages).
