Fruit was destemmed and chilled to a bag press where it underwent a gentle press cycle and the free run juice was separated for each parcel. The resultant juice was lightly clarified before undergoing a slow fermentation at cool temperatures of 14- 16ºC using carefully selected yeast in optimising varietal expression. Prior to blending and bottling the wines underwent an extended period of 3 months on yeast lees and time in premium French oak puncheons.
