The Vineyard

Grapes are sourced from hillside vineyards in Oltrepo Pavese, Pavia, at 200-400m altitude. The climate has hot summers and cold winters, with an
average of 600-900mm per year - particularly in late autumn and early sping. After a careful selection of grapes in the vineyard, the grapes are
destalked, crushed and the must including the skins is immediately cooled to around + 8 °C. Before pressing, 4-5 hours’ cold maceration is
carried out in total absence of air in order to encourage extraction of the aromas from the skins. This gives the wine its delicate dusky pink
colour from the natural pigmentation of ripe Pinot Grigo grapes. Once maceration has been completed, the crushed grape mass is softly pressed using bladder presses and the must fermented in stainless steel at a temperature of around 18°C.

Just as good as we hoped .....

We actually found this wine in a local pub, took a photo of the (empty ) bottle and found it online at Cheers. The wine is dry, but much smoother than some PGs, which can be a bit rough. The ordering service was simple, even though we had to change the delivery date after it was dispatched. I would recommend both this wine and Cheers!
