The Vineyard
Viticulturist, Geoff Wollcombe, harvested the grapes in cool morning
conditions . As with all Jackson Estate Sauvignons made by winemaker
Mike Paterson, the Green Lip was cool fermented for just under four
weeks, ensuring maximum varietal character. Following a racking of its
ferment lees, the wine spent several months in tank on its fine lees,
further developing palate richness and flavour.
