The more premium Sauvignon from Coteaux de Giennois, made from slightly older vines grown on 100% flint soils and aged on it's lees until bottling.
More complexity and length. Aromas of candied citrus peel and almonds with light herbaceaous notes. Generous on the palate with more ripe citrus fruit. Great acidity and spice on the finish keep you coming back for more!
Perfect with seafood, scallops and brie.

The Vineyard
Average age of the vines - 25 years old. Natural grass covered vineyards. 100% Flint soils. Guyot Poussard pruning method. Grapes are harvested once optimum quality is reached. Slow pressing for two and half hours followed by settling for 12 to 18 hours.
Fermentation in stainless steel vats and aged on the lees until bottling.
