Champagne Bollinger Special Cuvee Brut
A subtle combination of structure, length and vivacity; bubbles like velvet; pear, brioche and spicy aromas, notes of fresh walnut
On the eye this champagne is golden in colour with very fine bubbles. The nose gives a beautiful aromatic complexity of ripe fruit and spicy aromas, with a hint of roasted apples, apple compote and peaches. The palate is a subtle combination of structure, length and vivacity, brioche and spicy aromas along with notes of fresh walnut.
Run by Ghislain de Montgolfier, great-grandson of the founder, Bollinger remains family owned to this day. The winemaker is Alsace born Mathieu Kauffmann, who uses Pinot Noir in the Special Cuvée to lend summer berry notes, while Chardonnay gives it a delicate creaminess. 10% reserve wine – up to 15 years old – contributes the complexity you expect from this great name.
Madame Lily Bollinger, who died in 1971, was the wine’s greatest ambassador. Once, when asked how she enjoyed her Champagne, she replied, “I drink it when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise, I never touch it — unless I’m thirsty!”

Food pairing, It makes a great match for any fish, especially sushi and sashimi. It brings out the creaminess and sweetness of shellfish, such as shrimp, prawn, crayfish and grilled lobster. It stands up to poultry dishes beautifully, as well as white meat or, alternatively, charcuterie.

Bollinger is famous for its consistency of style, structure and aromatic complexity. This is a complex and elegant Champagne with a wonderful combination of velvety bubbles and flavours of pear, brioche, spice and fresh walnuts.Bollinger is one of the few remaining independent family owned Champagne houses. Since 1829, this moderately small house has worked tirelessly to acquire the finest vineyard sites, now totalling 163 ha, to guarantee the highest quality wine. The Champagne region of France lies approx 100 miles East of Paris. The chalky soil in this cool northerly climate creates a unique terroir for the Pinot Noir, Chardonnay and Pinot Meunier grapes. First fermentation takes place in Stainless Steel tanks. After blending, bottling and second fermentation the Special Cuvée will rest for a minimum of three years on its lees to allow the aromatic complexity to fully develop. “Bollinger Special Cuvee.
