Boutinot have worked with these selected growers from the Languedoc for a
number of years, as they provide us with grapes for red Malbecs. When
harvesting the grapes for rosé the timing had to be carefully judged to
allow the grapes to ripen fully, while still maintaining their fresh,
zippy profile necessary for a rosé wine. Early-morning harvesting (or
"the very end of the night" as winemaker Guillaume puts it), gentle
handling in the winery and vinification in stainless steel gave us a
delicate colour and fresh, soft berry flavours.
