The Vineyard
The best quality grapes are sourced from re-grafted old bush vines,
planted on gravel soils. Grapes are picked at night to ensure they are
cool when they reach the winery. Fermented for 22 days at 14 ºC, then
kept on fine lees for 4 months before bottling
